15 miles up the North Shore from Canal Park is one of Duluth's most celebrated restaurants rebranded as an Airstream food truck called Scenic 61 due to the ongoing Coronavirus pandemic.  Chef/owner Scott Graden, has pivoted his Nordic cuisine multiple times to meet the changing restaurant landscape.He is about to embark on the Minnesota State Fair with his Sashimi tuna tacos, a dream he has had for over 20 years.
